So, just how good are your baristi? Do they know how to pull the perfect shot of espresso every time? Can they stretch and froth milk with perfect consistency then pour latte art in the cup? Can they serve customers quickly so they get their drinks and get on their way?

An excellent barista can mean all the difference to a coffee shop: they help create the right ambiance, the proper spirit of service, and the excellent cups that customers will come back for.

PT’s Coffee Roasting Co. has been cultivating award-winning baristas for over 12 years. Led by Holly Bastin and Jeff Taylor, a certified World Barista Judge, our group of trainers have personally placed in the top two spots of the Midwest Barista Championship four out of the last five years. And placed two in the top three in all six years of the competition. Recently, Pete Licata finished second in the USBC.

Bryan is going to be working at the Roasting Facility in the capacity of Customer Service Representative. Bryan has previous experience working within the coffee industry therefore he brings with him a wealth of Barista and general coffee knowledge.

Bryan graduated from William Jewell College in Kansas City with a degree in Philosophy and Religion. His wife is currently obtaining her Masters degree at KU.

In his free time he home roasts coffee,  hikes and participates in almost any outdoor activity and enjoys spending time with his wife.

Hacienda La Esmeralda Especial has recieved so much acclaim over the past four years that it’s almost a non-event when another award is heaped upon it’s already bulging collection of trophy’s and certificates. The Panamanian farm that produces the world renowned coffee, La Esmeralda Especial, has done it again.

Just this week Ken Davids, of CoffeeReview.com, cupped and evaluated PTs Coffee Roasting Co.’s roast of this very special coffee. And the results were astounding! Davids gave PTs roast of La Esmeralda Especial the highest score he has ever given a coffee in Coffeereview’s 10-year history. Davids gave a “97″ on the 100 point scale. Only the third time in 10-years a coffee has recieved such high marks. Very rare praise indeed!

The Technivorm is one of the only brewers to pass the Specialty Coffee Association of America’s standards for brewing. This model gets water to the optimal temperature of 200 degrees. A powerful heating element gets up to temperature in seconds and the brewer has an optimal brew cycle of approximately 7 minutes, producing a 4-6 minute saturation time for coffee grounds. These brewers are produced in the Netherlands and only found through a few sources in the United States. The Technivorm brews directly into a thermal carafe, which allows the coffee to stay hot. This also keeps it off a heating element, thereby preventing that “burned” taste.

Perfect Brewing Notes:
If you would like us to grind your coffee for this brewer, we recommend you choose grind level coarse. It’s a bit coarser than auto drip and will better withstand the high water temperature that this brewer produces. Also note that the manufacturer’s water level markings on the side of the water holding tank do not indicate the recommended 6oz. cup size. Please use your own measuring cup to correctly measure the proper grounds to water ratio (2 level tablespoons ground coffee to 6oz. of cold, filtered water).

BLOGGLE REVIEW OF KENYA AA KIENI

Working in customer service is an interesting thing. You just never know when a customer, that comes to the counter and orders a drip coffee of the day, may return and suprise you years later. Doug was a customer many years ago at one of our retail stores in Kansas City. Well as life would have it, Doug was gifted with internet skills and writing ability. Many of our baristi probably thought when Doug moved away we’d never hear from him again….well, we have! Doug has written a blind reveiw of our coffee. He explains it better than I can in his review. I’ll just say I’m glad he still enjoys our coffee. His Blog is a great place to learn about coffee, Vermont, and much more. I think you’ll enjoy the things he shares. GO TO Bloggle!

I’ve known Jeff Taylor for nearly half a dozen years. Jeff’s a coffee guy through and through. He’s a heck of a barista, an international WBC judge, and a talented coffee roaster… which he puts to good use as co-owner of PT’s Coffee Roasting Co. in Topeka, Kansas. PT’s had a coffee shop up the street from me a ways when I was in Overland Park, Kansas… I understand they now have another only a block or two from my old place. (Clearly, one or the other of us needs to work on timing.)

Many moons ago Jeff was kind enough to send along a number of his coffees for me to sample. I enjoyed them each and all, but never quite got around to writing about them. (Okay… so it’s now clear that *I’m* the one who needs to work on his timing.) I figure that was something less than fair of me, so a number of weeks back I ordered some coffee to see what he’s roasting these days, with the intent of writing about *this* batch of beans. I’m glad I did. I enjoyed *this* round each and all, too, but one coffee in particular stands out…
PT’s Kenya AA Kieni Auction Lot is a sweetly perfumed cup, with jasmine-like hues of coffee flower, and… are those violets in its fragrance? Wetted, much of the florals remain, joined by a lower note that I read as amber and a new top-note of citrus. In the cup I find ripe, red grapefruit (seems I nearly always do with better coffees from Kenya’s Nyeri district) as well as flavors of green apple that are by turns sweet and tart. There’s lots of movement — surprising body, actually for a Kenya. The finish is long and sweet and leaves a bit of sweet cherry on the tongue.

This is an exceptionally clean cup. What’s more, it’s a cup that, unlike a great many Kenyan coffees — most all that I’ve tasted, in fact — doesn’t really flex its muscles at you. There’s none of the musky note that’s typical to origin. It’s not broad-shouldered at all… it’s all curves. It’s a Kenyan coffee in touch with its feminine side. And I like it.

INTRODUCING MAYA IXIL - GUATEMALA

Maya Ixil coffee cooperative is situated in the mountains of the tropical Ixcan region in the department of Quiche, Guatemala. The fertile valleys, temperate climate and high altitudes have a positive effect on cup quality, but this top quality cup is a direct result of the technical crop improvements of the Ixil farmers who are from the surrounding communities of San Juan Cotzal, San Gaspar Chajul and Santa Maria Nebaj.

Maya Ixil evolved out of the necessity to improve coffee prices. In 1998, a group began to organize and succeeded in gaining organic certification. It meant not only an improvement of the quality of life for the farmers, but also improvements for the environment through sustainable practices. Their socially responsible coffees are grown under shade trees, preserving native fruit and animal species. In 2004, Maya Ixil was certified Fair Trade coffee.
